<li>1 tbsp plus 1 tsp toco seasoning (8 Condiments)</li>
<li>1 cup 2% reduced fat cheddar cheese (1 Lean) Green onions to garnish</li>

<h2>Cheesy Taco Vegetable Skillet</h2>
<h2>Directions:</h2>
<ol>
<li>Heat a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up into small pieces with a spatula. Drain off any excess fat.</li>

<p><span class="ingredient-label" style="font-size: 24px; font-weight: bold;">INSTRUCTIONS</span></p>
<p>To make this lean and green Pepper Egg in a Hole recipe, follow these instructions:</p>
<ol>
<li>Preheat your oven to 425°F.</li>
<li>Cut the red bell peppers into eight rings, each about ¾-inch thick. Remove the seeds and stems from the peppers, and finely mince the remaining flesh. Set the minced pepper aside.</li>
<li>Arrange the eight pepper rings on a baking sheet lined with parchment paper.</li>
<li>Add 1½ tablespoons of cheese to each pepper ring, and then top each with one tablespoon of the minced pepper. Bake for approximately 10 minutes, or until the cheese is melted.</li>
<li>Remove the baking sheet from the oven and carefully crack one whole egg into each pepper ring.</li>
<li>Season the eggs with salt and pepper, and sprinkle the remaining cheese over the eggs. Add about one tablespoon of cheese per pepper ring.</li>
<li>Bake for eight more minutes, or until the eggs are fully cooked.</li>
<li>While the eggs are baking, mix the shredded jicama with the tomatillo salsa and the remaining minced red peppers. Divide the mixture into four portions and arrange each portion on a plate.</li>
<li>Serve the Pepper Egg in a Hole hot from the oven with the jicama and salsa mixture on the side.</li>

<li><span style="font-weight: 400;"> Add the scallions, fennel, and green pepper, and continue to sweat for about 3 to 4 minutes over moderate heat.</span></li>
<li><span style="font-weight: 400;"> Add the tomatoes, including the juice, and bring to a boil.</span></li>
<li><span style="font-weight: 400;"> Simmer for about 8 minutes until all vegetables are tender.</span></li>
<li><span style="font-weight: 400;"> Combine the halved shrimp and diced tilapia with the scallops in a bowl and season with salt and pepper; mix very carefully.</span></li>

<h2>Directions:</h2>

<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Slice peppers in half lengthwise, remove ribs and seeds, and set aside.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">In a large skillet, sauté the onions and garlic in broth over medium-high heat for about 5 minutes or until the onions are translucent. Add the mushrooms, and continue to cook until the mushrooms are tender. </span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Mix in the roast beef and heat through, about 3 to 5 minutes. Remove the skillet from heat, and stir in cream cheese. </span></li>

Next, fill each pepper with an eighth of the roast beef mixture, then top with another quarter slice of cheese. Repeat for remaining bell pepper halves. Bake for 15 to 20 minutes until the peppers are tender and the cheese on top is melted and bubbly.</span></li>

<h2>Loaded Cauliflower and Buffalo Chicken Casserole</h2>
<h2><span style="font-weight: 400;">Directions:</span></h2>
<ol>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Preheat the oven to 400 degrees. </span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">In a large bowl, mix together the olive oil, salt, pepper, paprika, garlic powder, and hot sauce. Add the cauliflower florets and stir to coat. Scoop the cauliflower into a 9X13 inch baking dish, leaving behind as much of the olive oil/hot sauce mix as possible.</span></li>

<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">While the cauliflower is cooking, add the cubed chicken to the bowl with the leftover olive oil/hot sauce mix and stir to coat. Once the cauliflower is fully cooked, remove from the oven. Top the cauliflower with the raw marinated chicken.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">In a bow mix together the cheese, turkey bacon, and green onion and top the raw chicken with the cheese mix. Return the casserole to the oven and bake for 15 minutes or until the chicken is cooked through and the topping is bubbly.</span></li>

<h3><span style="font-weight: 400;">Serve.</span></h3>

<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">2 cups whole roasted and peeled green </span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">4 oz. reduced-fat cream cheese, room temperature</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">1/2 cup low-fat plain greek yogurt</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">1 2/3 cups grated low-fat mozzarella</span></li>

<h2>Lean and Green &#8211; Green Chile and Chicken Enchilada</h2>
<h2><span style="font-weight: 400;">Instructions</span></h2>

<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Preheat the oven to 375 F/190 C. Sprays a 9-inch x 13-inch casserole dish with non-stick spray.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Trim visible fat from chicken breasts and cut each one in half lengthwise. Put the chicken into a small shallow pan, cover with water, and simmer over low heat until the chicken is done, about 15 minutes. Drain chicken into a colander in the sink.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Remove to a cutting board to cool.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Put the enchilada sauce into a small saucepan and simmer over low heat until the sauce has thickened and reduced by about 20 minutes. Turn off the heat and stir in the cream cheese and Greek yogurt.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Drain the can of whole green chiles into the colander and let them drain for a few minutes. Then one at a time, use your fingers to split the chiles open and remove the seeds, piling them into two piles so you can make two equal layers in the casserole. (If chiles still seem wet, you can blot them with a paper towel)</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">When the chicken is cool enough to handle, shred it apart into bite-sized pieces.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Layer half the green chiles into the bottom of the casserole dish. Over that, make a layer of half the chicken, half the sauce, and half of the grated cheese. Make another layer each of green chiles, chicken, sauce, and cheese. Bake uncovered for about 40 minutes. Let sit for about 5 minutes before cutting. Serve hot.</span></li>
