INGREDIENTS

  • ½ tsp Black Pepper
  • 8 large Eggs
  • 2 cup Jicama shredded
  • 4 large Red Bell Peppers
  • 1⅓ cup Reduced Fat Cheddar Cheese
  • 1 tsp Salt (optional)*
  • ¼ cup Tomatillo Salsa

INSTRUCTIONS

To make this lean and green Pepper Egg in a Hole recipe, follow these instructions:

  1. Preheat your oven to 425°F.
  2. Cut the red bell peppers into eight rings, each about ¾-inch thick. Remove the seeds and stems from the peppers, and finely mince the remaining flesh. Set the minced pepper aside.
  3. Arrange the eight pepper rings on a baking sheet lined with parchment paper.
  4. Add 1½ tablespoons of cheese to each pepper ring, and then top each with one tablespoon of the minced pepper. Bake for approximately 10 minutes, or until the cheese is melted.
