LEAN & GREEN MEXICAN MEATLOAF
INGREDIENTS
- 2 1/4 lbs Lean Ground Beef
- 1/2 cup Egg Beaters
- 1 tsp Chili Powder
- 1/2 tsp Cumin
- 1/4 tsp Salt
- 2 small Garlic Cloves minced
- 1/2 cup Salsa
- 1 cup Reduced Fat Monterey Jack Cheese shredded
- 1 cup Reduced Fat Cheddar Cheese shredded
- 4 oz Mild Green Chilies chopped

INSTRUCTIONS
- Preheat oven to 375*F.
- In a mixing dish, combine the ground beef, eggs, and seasonings. Cut a large square of waxed paper and roll the ground beef mixture into a flat slab. Sprinkle the remaining half of the cheese and green chilies over the top. Wrap wax paper around it, making a loaf roll at both ends. The end result should not leak out since you wrap it in wax paper. Remove the wax paper carefully.
- Put the chicken in a 9 x 5-inch loaf pan, cover with salsa, and bake for 50 to 55 minutes, or until done.
- Sprinkle cheese on top of the bake and wait 10 minutes or until you see the cheese melt.
