LEAN & GREEN MEXICAN MEATLOAF

INGREDIENTS

  • 2 1/4 lbs Lean Ground Beef
  • 1/2 cup Egg Beaters
  • 1 tsp Chili Powder
  • 1/2 tsp Cumin
  • 1/4 tsp Salt
  • 2 small Garlic Cloves minced
  • 1/2 cup Salsa
  • 1 cup Reduced Fat Monterey Jack Cheese shredded
  • 1 cup Reduced Fat Cheddar Cheese shredded
  • 4 oz Mild Green Chilies chopped

INSTRUCTIONS

  1. Preheat oven to 375*F.
  2. In a mixing dish, combine the ground beef, eggs, and seasonings. Cut a large square of waxed paper and roll the ground beef mixture into a flat slab. Sprinkle the remaining half of the cheese and green chilies over the top. Wrap wax paper around it, making a loaf roll at both ends. The end result should not leak out since you wrap it in wax paper. Remove the wax paper carefully.
  3. Put the chicken in a 9 x 5-inch loaf pan, cover with salsa, and bake for 50 to 55 minutes, or until done.
  4. Sprinkle cheese on top of the bake and wait 10 minutes or until you see the cheese melt.
