- ½ tsp Black Pepper
- 8 large Eggs
- 2 cup Jicama shredded
- 4 large Red Bell Peppers
- 1⅓ cup Reduced Fat Cheddar Cheese
- 1 tsp Salt (optional)*
- ¼ cup Tomatillo Salsa

INSTRUCTIONS
To make this lean and green Pepper Egg in a Hole recipe, follow these instructions:
- Preheat your oven to 425°F.
- Cut the red bell peppers into eight rings, each about ¾-inch thick. Remove the seeds and stems from the peppers, and finely mince the remaining flesh. Set the minced pepper aside.
- Arrange the eight pepper rings on a baking sheet lined with parchment paper.
- Add 1½ tablespoons of cheese to each pepper ring, and then top each with one tablespoon of the minced pepper. Bake for approximately 10 minutes, or until the cheese is melted.
