  • 2 sachet OPTAVIA Select Honey sweet Potatoes
  • 1 cup Cold Water
  • 2 sachet OPTAVIA Essential Spiced Gingerbread
  • 6 tbsp Liquid Egg Substitute
  • 1/4 cup Unsweeted Original (optional)*
  • 1/2 cup Pumpkin Pie Spice (optional)*
  • 1/2 tsp Vanilla Extract
  • 1/2 tsp Baking Powder
  • 1 can Light Cooking Spray
  • 1/3 oz Pecans chopped



  1. Preheat oven to 350*F.
  2. Prepare Honey Sweet Potatoes according to package directions. Let cool slightly.
  3. Combine cooked honey, Sweet Potatoes and the rest of the ingredients in a medium-sized mixing dish (except for the pecans).
  4. Using a paper cupcake liner or a silicone mat lightly sprayed, divide the mixture among eight muffin slots in the muffin tin. Sprinkle tops with chopped pecans
  5. Bake for 20 minutes.
