LEAN & GREEN BROCCOLI CHEDDAR BREAKFAST BAKE

INGREDIENTS

  • 6 cup Small Broccoli florets
  • 9 large Eggs
  • 1 cup Unsweetened Almond Milk
  • 1/4 tsp Black Pepper
  • 1/4 tsp Cayenne Pepper (optional)*
  • 1 can Light Cooking Spray
  • 4 oz Reduced-Fat Cheddar Cheese shredded

LEAN & GREEN BROCCOLI CHEDDAR BREAKFAST BAKE

INSTRUCTIONS

  1. Preheat oven to 375*F.
  2. In a large microwave-safe dish, combine the broccoli with 2 to 3 Tbsp. water. Microwave on high for 3 to 4 minutes or until crisp-tender. Remove the broccoli from the microwave and transfer to the colander and drain any excess liquid in a strainer.
  3. Meanwhile, in a medium-sized mixing bowl, whisk together the eggs, milk, and seasonings.
  4. Place the broccoli in a lightly greased 13 x 9 baking dish. Sprinkle the cheese over top, then spoon over the egg mixture.
  5. Bake for 40 to 45 minutes, or until the center is firm and the top has a light brown crust.
