Lean & Green Sweet Potato Pecan Muffins

LEAN & GREEN SWEET POTATO PECAN MUFFINS
INGREDIENTS
- 2 sachet OPTAVIA Select Honey sweet Potatoes
- 1 cup Cold Water
- 2 sachet OPTAVIA Essential Spiced Gingerbread
- 6 tbsp Liquid Egg Substitute
- 1/4 cup Unsweeted Original (optional)*
- 1/2 cup Pumpkin Pie Spice (optional)*
- 1/2 tsp Vanilla Extract
- 1/2 tsp Baking Powder
- 1 can Light Cooking Spray
- 1/3 oz Pecans chopped
LEAN & GREEN SWEET POTATO PECAN MUFFINS
INSTRUCTIONS
- Preheat oven to 350*F.
- Prepare Honey Sweet Potatoes according to package directions. Let cool slightly.
- Combine cooked honey, Sweet Potatoes and the rest of the ingredients in a medium-sized mixing dish (except for the pecans).
- Using a paper cupcake liner or a silicone mat lightly sprayed, divide the mixture among eight muffin slots in the muffin tin. Sprinkle tops with chopped pecans
- Bake for 20 minutes.
